Our traditional St. Martin’s goose menu

Once again this year, we are serving our traditional St. Martin’s goose at Schmidt’s – naturally sourced from the region, carefully selected, and refined with the best seasonal ingredients into a festive menu. Look forward to a piece of true autumn tradition.

The Secret of Fermentation

Several jars of fermented vegetables sit on a stainless-steel work surface. You can see jars filled in different ways with carrots, cucumbers, white cabbage, and other pickled vegetable mixes. The image shows results from Schmidt’s Restaurant Dresden’s fermentation workshop, where team members try out traditional techniques for preserving seasonal ingredients sustainably.

For us, sustainability and a mindful, respectful approach to food aren’t empty buzzwords, but values we live by – very much in the spirit of the Slow Food movement, which we’ve supported with conviction for many years.

The dining room at Schmidt’s Restaurant Dresden shows a spacious, bright dining area with set tables, white napkins, fresh tulips, and polished wine glasses. Large windows and warm wooden floors characterize the modern bistro atmosphere in the Hellerau restaurant. The combination of red accents, long benches, and stylish lighting conveys the character of a fine dining restaurant with regional, seasonal, and creative cuisine in Dresden.

We are delighted to announce that we have once again been recommended by the Slow Food Germany movement’s Genussführer (Enjoyment Guide). On July 15, 2025, the certificate was presented to our head chef and managing director, Olaf Kranz.
